Blueberry Pancakes

Ingredients
- 1 cup all-purpose flour
- 2 tablespoons cornstarch
- 1-1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1 cup vanilla or plain soymilk
- 2 tablespoons vegetable oil
- 2 tablespoons honey
- 3/4 cup blueberries
Preparation
- Combine flour, cornstarch, baking powder and salt in a medium mixing bowl. In a small bowl, whisk eggs, soymilk, oil and honey until thoroughly combined.
- Pour soymilk mixture over dry ingredients and whisk gently until barely combined – the batter should be slightly lumpy. Gently fold in blueberries. Cook on a hot, oiled griddle.
Serves
Yield 10-12 pancakes
